Al Pepe. In a peppercorn, mushroom, mustard, brandy and cream sauce.
Alla Rossini. Rich demi glacé sauce, served with a smooth pate.
Alla Diana. Mushrooms, onions, mustard, wine and cream.
Alla Piazzaola. Fresh oregano, cracked peppercorns, roasted garlic and a bit of chilli sauce.
